Ingredients: Pie crusts (1 or 2, depending on regular or deep dish) Pie Filling: 3 eggs 1 stick of butter 1/2 cup crushed pineapple 1 1/2 cups coconut 1/2 tsp vinegar 1 1/4 cup sugar 1 tsp vanilla Preheat oven to 350 degrees F. Melt butter in skillet. Combine sugar and coconut in a bowl. Wisk eggs in separate bowl. Add butter, pineapple, eggs, vanilla, and vinegar until mixed well. Pour filling into pie crust(s). Bake at 350 for 1 hour then turn down oven to 300, let bake until golden brown. |
