Ingredients: Pie crusts (1 or 2, depending on regular or deep dish) Pie Filling: 3 eggs 1 stick of butter 1/2 cup crushed pineapple 1 1/2 cups coconut 1/2 tsp vinegar 1 1/4 cup sugar 1 tsp vanilla Preheat oven to 350 degrees F. Melt butter in skillet. Combine sugar and coconut in a bowl. Wisk eggs in separate bowl. Add butter, pineapple, eggs, vanilla, and vinegar until mixed well. Pour filling into pie crust(s). Bake at 350 for 1 hour then turn down oven to 300, let bake until golden brown. |

Ingredients: 10 lb white or russet potatoes 4 hard boiled eggs (3 chopped one whole 6 large dill pickles (chopped) 1/2 cup chopped sweet pickles 1/4 cup green olives with pimentos (chopped) 2 yellow onions (chopped) 1 cup mayonnaise 1/4 cup milk 1/4 cup butter mustard salt pepper sugar Tabasco Sauce (optional) paprika Clean, peel ,and cut potatoes in chunks. Boil potatoes until soft then drain and mash, adding milk and butter. Mash until you still have small lumps with the mashed. Add all the pickles, onions, olives, the 3 chopped eggs and mayonnaise. Mix until blended. Add enough mustard to make the salad yellow (and to fit desired taste). Then add salt, pepper, sugar, and Tabasco (for desired taste). Put potato salad in large serving bowl, and garnish with the last egg sliced on top, then sprinkle with paprika. This is a salad with a whole lot of flavor...which is just how we do in the SOUTH! ENJOY!! ![]() Cabbage Ingredients: One head of cabbage (preferably one straight from the garden) Hog Jowls Salt Pepper Cornbread Ingredients: 1/2 cup butter 2/3 cup sugar 2 eggs (preferably eggs from your chicken.. if available) 1 cup cornmeal 1cup flour 1/2 tsp baking soda 1/2 tsp salt (if using self-rising flour, omit salt and baking soda) 1 cup buttermilk Cornbread- Pre-heat oven to 375 degrees F (175 degrees C). Melt butter in iron.skillet, do not let boil. In a bowl, combine all dry ingredients. Wisk eggs in a separate bowl, then add to dry mixture. Add remaining ingredients (including butter) and mix until well blended and a few lumps remain. Pour batter into buttery iron skillet. Bake 30 to 40 minutes, or until golden brown. Cabbage- A cabbage grown in the winter is the best to choose from...it will already be sweet. Clean and cut cabbage taking note to separate dark and light leaves. Slice Hog Jowls and bake in oven until crispy. Put dark green leaves, drippings from Hog Jowls, salt, pepper and a splash of water (not much because cabbage makes it's own water). Cook for about 10 minutes, then add the rest of the cabbage and cook until slightly tender. Do not cook too long or it will be mushy. Fresh tomatoes or homemade chow chow makes a great topping.
